Strawberry Shortcake

Preheat the oven to 220°C, gas mark 7. Grease and flour your 20cm round cake tin in preparation. Coat your strawberries with the caster sugar and set to one side. In a bowl combine the flour, 2 tablespoons of caster sugar, baking powder and salt. Rub the margarine into the mixture until it looks like crumbs. In another bowl combine the egg and the milk and beat. Create a well in the centre of the crumbs like mixture and pour into it the beaten milk and egg. Stir the mixture until combined. Spread the mixture into the prepared tin and bake in the oven for 15-20 mins or until golden brown. Once cooled top the shortcake with the strawberry & orange marmajam, then a layer of whipped cream and then the strawberries.
