STICKY CHINESE SAUCE:
Marinade: Rub over ribs, fish, poultry or tofu.
Duck Pancakes: Slather sauce over warm pancakes. Add cucumber, spring onion and hot duck.
Crispy Dippers: Mix with sherry and sesame oil and dunk steamed or fried wontons, spring rolls or Chinese egg rolls.


PIRI PIRI & JERK RUB:
Chicken Or Fish Marinade: Mix 2 level tsp of either rub in a bowl with 20ml of olive oil and juice of ½ lemon and coat 8 small chicken or fish portions. Sprinkle with a little salt and lay on a baking tray. Leave to marinade in the fridge for 1 hr. Cook chicken for about 40 mins or fish for 30 mins at 180°C until piping hot throughout and lightly browned. 
Baked Veggies: Mix 2 heaped tsp of rub in a bowl with 40ml of olive oil, a chopped clove of garlic and juice of ½ lemon. Mix into 1kg of chopped chunky vegetables on a baking tray (aubergine, carrots, sweet potato, courgette, peppers and onions) or any other veggies that your fancy. Cook at 160°C turning once during cooking or cover in foil for 30 -40 mins until cooked through.
